When I cook, I tend to favour the technique of finding a nice, simple recipe with lots of pictures, then changing all of the ingredients and procedures.  Making ‘Yaki Soba’ this week, that is exactly what I did.  Here is my own recipe with pictures, so that you can make this super-yummytastic dish yourself, or else change everything and make something vaguely similar.

– 1 Pack Udon Noodles (Thick ones)
– Handful of prawns
– 2tsp Chili, finely chopped
– 1tsp Ginger, grated
– 1clove Garlic, finely chopped
– Green&Yellow peppers, sliced
– 1 Carrot, peeled and sliced
– 1/2 Onion, Chopped
– Handful of spinach
– 1 Egg
– Soy sauce, dark and light
– Sesame Oil

(Or subract pretty much any of those ingredients and/or add your own)
(The other thing in the photo is a ‘flavour shaker’ which works like a pestle and mortar)

– Mix together 1tbsp Sesame Oil, 1tbsp Light Soy, 1tbsp Dark Soy, Egg, Ginger
– In a wok, fry the Onion in 1tbsp Sesame Oil, then add…
– …the Carrot…
– …then the peppers…
– …and then the prawns…
– …then the garlic and chili…
– …before chucking in the noodles and the spinach.
– Once that’s all looking nice and tasty, in goes the seasoning mixture for a minute or so.
– Serve!

– The final dish should look something like this (ish).
– It should be fragrant, refreshing and have a great range of textures and flavours.

(Note that this dish in no way represents any kind of authentic Chinese or Japanese cuisine, but it still seems quite tasty.)
